Fondant Potatoes & Turnips

Cook on a very low heat to get really tasty turnips that will taste like potatoes.

Ingredients

Turnips 2 (350-400g)
Potatoes 350-400g
Olive oil 4-5 tbsp
Salt (Maldon) 1/2 tsp

Method

Choose large turnips and small potatoes, don't peel them. Cut the turnips into 8 wedges and keep the potatoes as bitesize.

Put the oil in a large frying pan. Add the vegetables and sprinkle with salt. Put the lid on and cook for 30 minutes on medium low heat, turning occasionally.

The vegetables are cooked when you can pierce them with a skewer. Transfer to a serving dish.

To make it more colourful, add in some cherry tomatoes and finely chopped parsley 5 minutes before the end.

Tips & Note

I tried using turnips instead of the baby beetroot in Nanita's recipe which was so delicious. This worked well, but I preferred the beetroot! Try Nanita's recipe (ID 1865).
