Ingredients

Dashi stock 200ml
Soy sauce 1 tbsp
Mirin 1 tbsp
Sake 1 tbsp
Salt a pinch
Sesame oil 1 tbsp
Choy sum bunch 1
Deep fried tofu 1

Method

Put 200ml hot water in a pan and add 1 tsp of dashi stock granules to make dashi stock. Add the soy sauce, mirin, sake and salt, bring to the boil, then turn the heat off.

Cut the choy sum into 5cm lengths. Pour some hot water onto the deep fried tofu to wash off excess oil and cut into strips.

Put the sesame oil in a frying pan on medium heat, add the tofu and stir fry for 2 minutes. Add the stalks of the choy sum, stir fry for 1 minute, then add the leaves and stir fry for another minute.

Turn the heat down and pour in the dashi stock from Step 1. Once it's cooled down, it's ready to serve. Sprinkle with some bonito flakes and chilli powder on top.
