Aubergines In A Hot Miso Vinegar Marinade

Ingredients

Aubergine 1
Celery 1
Plum tomatoes 3
★Miso (red) 1.5 tbsp
★Chinese chilli bean sauce 1 tsp
★Vinegar 3 tbsp
★Sesame oil 1 tbsp
★Chicken stock 1 tbsp
★Water 9 tbsp

Method

Peel parts of the aubergine skin and score it.

Cut the aubergine into 3 then each piece into 6 or 8 slices. Sprinkle with salt and rub in.

Put into a dish and cover with cling film. Put into the microwave for 5 minutes (600W).

Add all the ★ingredients in a different bowl.

Finely slice the celery and plum tomatoes cut in 4 and add to the bowl in Step 4.

Remove the aubergines from the microwave and pat dry.

Add to Step 5, cover and leave for 1 hour, then it's ready to serve.

Tips & Note

When the hot aubergine cools down, it absorbs all the marinade flavour. The celery will cook from the heat of the aubergines.
