Broccoli in a Set Jelly

Ingredients

Broccoli 1/3
Dashi stock 400ml
Egg 1
Agar powder 1 tsp
Seasonings:
Light soy sauce 1.5 tsp
Sake 1 tbsp
Mirin 1 tbsp
Salt a little

Method

Boil the broccoli until soft and chop to small florets. Put into a deep tray.

Put the dashi stock in a pan and add the agar powder. Bring to the boil.

Add all the seasonings into the pan at Step 2 then add the beaten egg a bit at a time.

Pour Step 3 gently over the broccoli and set aside until firm.

This is the agar powder I used, I bought it in Chinatown.

Tips & Note

●If you sieve the beaten egg before you add it at Step 3, the end result will be smoother
●If you use a plastic container to make this, wet it first before pouring in the mixture as it will be easier to remove when firm. Keep at room temperature to firm up but you can put the deep tray in a cold water bath to firm up quicker if you're in a hurry.
