How to Make Shredded Omelette (Kinshi Tamago)

Perfect for noodle dishes and salads.

Ingredients

Eggs (medium) 2
Water 2 tbsp
Potato starch or cornflour 1 tsp
Granulated sugar 1 tsp
Salt 1/2 tsp

Method

Put the eggs, sugar and salt in a large bowl and whisk well.

Mix the potato starch with the water, then add to the bowl and mix.

Put a touch of light oil in a frying pan and pour all the eggs in and fry on low heat.

When it's half cooked, remove from the pan (it will continue cooking on residual heat). Allow to cool.

Roll up the egg, leaving a hollow core.

Slice into 1mm strips then open them out by lifting and dropping.

Make ramen noodles from spaghetti.

Tips & Note

●I fried only one side of the egg, but if you can successfully turn it over, give it a go!
