Dumplings on Artichoke Boats

Ingredients

Artichokes 1/2
[A]
Minced chicken 100g
Onion (large) 2
Ginger 1 thumb
Sake 1/2 tsp
Soy sauce 1/2 tsp
Potato starch or cornflour 1 tsp
Salt a little
Potato starch or cornflour as required
Mustard, vinegar, soy sauce as required

Method

Remove the outer leaves from the artichoke and keep the largest 4 to make the boat.

Remove the hard edges and the pistil from the remaining artichoke and soak into lemon or vinegar water.

Finely slice the onion and grate the ginger. Chop Step 2 into small pieces and pat dry.

Put the ingredient for [A] into a bowl and mix well. Make 4 large meatballs. Press a bit of Step 3 into the centre of each meatball and cover over.

Sprinkle the potato starch onto a plate and roll the meatballs into the flour to coat well. Place a meatball onto a leaf from Step 1.

Put into a steamer for 10-12 minutes.

It's ready to serve with a blend of mustard, vinegar and soy sauce.
