Chinese Stir Fried Chicken and Asparagus in Oyster Sauce

Ingredients

Chicken breast fillet 1
Salt & pepper 1 tsp
Sake 1 tsp
Soy sauce 1 tsp
Cornflour or potato starch 1 tbsp
Vegetable oil as required
Ginger 1 thumb
Garlic 1 clove
Shallot 1/2
Asparagus 12
Oyster sauce 1.5 tbsp
Sesame seeds as required
Sesame oil 1 tsp

Method

Cut the chicken into bitesize pieces then season with the salt & pepper, soy sauce and sake. Mix well then rub with the cornflour.

Put 2 tbsp vegetable oil in a large frying pan and add the chopped shallot, ginger and garlic and fry on medium heat.

After 1 minute, add the chicken and fry for 5-6 minutes then remove to a plate. Add 1 more tbsp oil to the pan and fry the 4cm lengths of asparagus for 1 minute.

When the asparagus is nicely coated in the oil, add the oyster sauce and return the chicken from Step 3 to the pan. Mix well and cook for 2 minutes.

Finish with the sesame oil drizzled on the top and sprinkle with some chopped spring onion if you like and the sesame seeds.

Tips & Note

Work fast after Step 3 to retain a good crunch to the asparagus.
