Easy Sweet Chilli Chicken

A delicious dish with a rich and sweet flavour.

Ingredients

Chicken thighs 2
Salt & pepper as required
Soy sauce 1 tbsp
Egg 1
Cornflour or potato starch 3 tbsp
Vegetable oil as required
Pepper (red and green) 1/2 each
Onion 1/4
Ginger 1 thumb
Garlic 1 clove
Spring Onion 1
Sesame seeds as required
Sauce:
Tomato ketchup 3 tbsp
Soy sauce 1 tbsp
Chinese chilli bean sauce 1 tbsp
Honey 2 tbsp
Chicken stock granules 1 tsp

Method

Cut the chicken thighs to bitesize pieces and mix with the salt & pepper, soy sauce, egg and cornflour or potato starch. Keep aside for 5 minutes. Mix the sauce ingredients together in a bowl.

Put the vegetable oil about 1cm deep in a frying pan and heat to 180C. Shallow fry the chicken from Step 1 for 6 minutes all over until nicely browned then transfer to a plate.

Add a touch more vegetable oil to the frying pan and stir fry the finely chopped garlic and ginger for 1 minute. Add the roughly chopped peppers and sliced onions and fry for 1 minute.

When the onions have softened, add the sauce and return the chicken from Step 2 to the pan. Cook for 2 minutes mixing together with the sauce. Season to taste.

Transfer to a plate and sprinkle the finely chopped spring onion and sesame seeds on top. Enjoy!

Tips & Note

If you like it hot and spicy, just increase the amount of chilli bean sauce.
