Spicy Fried Chicken Chinese Style

Ingredients

Chicken thighs 2
Egg 1
Soy sauce 1 tsp
Pepper a pinch
Corn starch (or potato starch) 1 tbsp (or 1 tsp)
◆Ginger 1 thumb
◆Garlic 1 clove
◆Soy sauce 1 tbsp
◆Oyster sauce 1 tsp
◆Sugar 1 tbsp
◆Water 3 tbsp
◆Rice wine (sake) 1 tbsp
◆Vinegar 1 tsp
◆Sesame oil 1 tsp
◆Corn starch (or potato starch) 1 tbsp (or 1 tsp)
Vegetable oil for frying as required
Spring onions 1-2
Dried chillies 2
Flour as required
Sesame seeds as required

Method

Cut the chicken into small bitesize pieces then put in a small bowl with the soy sauce, pepper, whole egg and corn starch and mix well.

Make the sauce. Put all the ◆ ingredients into another bowl and mix well. Finely chop the ginger and garlic.

Dredge the chicken with plenty of flour and fry in the hot oil (180C) for 5 minutes.

Remove to a dish when they're nicely browned.

Put 1 tsp oil in a frying pan and add the chopped spring onions and deseeded crushed dried chillies and fry for 30 seconds. Add the sauce from Step 2.

When the sauce has thickened, return the chicken from Step 4 to the pan and mix well with the sauce. Transfer to a serving dish and sprinkle with the sesame seeds.
