Super Simple and Delicious Chicken and Celery Stir Fry

Celery and chicken work wonderfully well together, especially if the celery still has a nice crunch.

Ingredients

Celery 3
Carrots (medium) 1
Chicken breast fillet 1
Ginger 1 thumb
Shallot 1/2
Chicken marinade:
Cornflour or potato starch 1 tbsp
Salt a pinch
Ginger 1/2 thumb
Rice wine (mirin) 1/2 tsp
Vegetable oil 1 tsp
Honey 1 tsp
Chicken stock 150ml
Spring onion 1

Method

Cut the chicken into bitesize pieces and soak in the marinade (from cornflour to honey) for 30 minutes.

Put 1 tbsp vegetable oil in a large frying pan and stir fry the thumb of ginger on medium heat for 1 minute.

Add the bitesize pieces of celery and carrots and fry on high heat for 2 minutes, then remove to a plate.

Add another tbsp vegetable oil to the same frying pan and stir the chopped shallot and half-thumb of ginger for 1 minute.

Add the marinated chicken and stir for 5 or 6 minutes on high heat. Add 1/2 tbsp of soy sauce if you like, and the chicken stock. Return the celery and carrots to the pan.

Combine the sauce and the ingredients and cook for 2 minutes. Sprinkle with the finely chopped spring onion before serving.
