Fried Vermicelli With Seafood

Throw in any vegetables or seafood left in the fridge and you'll end up with a super dish.

Ingredients

Vermicelli 180g
Frozen squid 150g
Prawns 100g
Peppers (red and green) 1/2 each
Mushrooms 4
Surimi (crabsticks) 3
Garlic 1 clove
Sauce:
Fish sauce (nam pla) 1 tbsp
Soy sauce 2 tbsp
Chicken stock 100ml
Sugar 2 tsp
Oyster sauce 3 tbsp
Salt a pinch
Dried chilli 1
Vegetable oil 2 tbsp

Method

Soak the vermicelli in hot water for 4 minutes to rehydrate then drain well. Cut into 10cm lengths. Mix all the sauce ingredients together in a small bowl.

Put the vegetable oil in a frying pan and heat to very hot. Add the chopped vegetables, finely chopped garlic and the deseeded and crushed dried chilli and fry.

When the vegetables have softened, add the surimi, squid and prawns and fry. Add the sauce and the vermicelli and fry further.

Allow the vermicelli to absorb the sauce well before serving.

Tips & Note

Try using anything left in the fridge, like cabbage, carrots, beansprouts, etc.
