Dried Shrimp & Shiitake Mushroom Chinese Congee

Ingredients

Dried shrimps a handful
Dried shiitake mushrooms 3
Ginger 2 thumbs
Garlic 1 clove
Sesame oil as required
Salt & pepper as required
●Oyster sauce 1/2 tsp
●Sugar 1 tsp
●Soy sauce 2 tsp
Chinese chicken stock 500-700ml
Cooked rice 1-2 cups
Mirepoix (celery, onion, carrot) as required
Chicken breast 1/2 or 1
Prawns 5-6
Egg (medium) 1

Method

Rehydrate the shrimps and mushrooms and finely chop them. Cut the garlic and ginger into fine strips.

Put the sesame oil in a small pan and fry the ginger and garlic on medium heat.

Add the shrimps and mushrooms and fry for a few minutes. Add all the ●ingredients and season with salt & pepper.

Put the mirepoix into a pan of hot water and bring to the boil. Add the whole chicken breast and cook.

Remove the cooked chicken and cut into small dice.

Pour the chicken stock into another pan and heat on medium. Add the rice and cook until it thickens.

Add the cubed chicken and chopped prawns and cook well. Season with salt. Pour in the beaten egg and turn the heat off, mixing well.

Top with Step 3 before serving.

Tips & Note

●You can use fresh mushrooms instead of dried ones
