Spicy Cod Hot Pot

Ingredients

Cod fillets 8
Chinese leaves bunch 1-1.5
Chinese chives bunch (nira) 1
Spring onions 4-5
Tofu 1
Soup:
Onion 1/2-1
Garlic 1 clove
Ginger 2 thumbs
Minced pork 100g
Chinese chilli bean sauce 2 tbsp
Tahini or sesame paste 2-3 tbsp
Miso 2 tbsp
Soy sauce 1 tbsp
Chicken stock 500-700ml
Vegetable oil 1 tbsp
Salt & pepper as required

Method

Put the oil in a large deep pan and add the finely chopped onions. Fry on low heat until soft.

Add the finely chopped garlic and ginger then add the minced pork and fry until browned.

Add the chilli bean sauce and fry for a few minutes.

Mix together the sesame paste, miso, soy sauce and stock then add into the pan and bring to the boil. Turn the heat down to low and simmer for 5-7 minutes.

Add the chopped chives and thin strips of the bottom part of the Chinese leaves and cook for a few minutes before adding the roughly chopped top part of the Chinese leaves and the large diced tofu.

Add the cod and cook well until the Chinese leaves are soft.

Take the whole pot to the dining table and serve into small bowls. Enjoy!

Tips & Note

●Use white miso rather than red, but if it's too sweet, add more soy sauce.
●The sesame paste and miso are likely to sink to the bottom of the pan so stir to incorporate them before serving.
