Bindi Bhaji (Okra Curry)

Ingredients

Onion 1
Tinned tomatoes 1/2
Cauliflower 1/2
Okra 15-20
Cumin seeds 1 heaped tsp
Coriander seeds 1 heaped tsp
Turmeric 1 heaped tsp
Fennel seeds 1 heaped tsp
Garam masala 1 heaped tsp
Crushed chilli 1 tsp
Garlic 1 clove
Ginger 1 thumb
Salt as required
Vegetable oil as required

Method

Slice the onion and pull apart the cauliflower into florets. Finely chop the garlic and ginger, cut the okra into 2.5cm lengths.

Put the vegetable oil in a pan and add the onion on medium heat. Fry until soft and browned.

Add the cumin seeds, coriander seeds, turmeric, chilli, garlic and ginger and mix well.

Add the okra and stir fry.

Pour the tinned tomatoes in and enough water to cover the okra. Bring to the boil.

Turn the heat to medium and cook until the okra is soft.
