Grilled Squid and Spring Onion Spicy Rice

Goes well with a nice drink.

Ingredients

Squid 2
Salt & pepper as required
Chilli flakes as required
Vegetable oil as required
Just cooked rice for 4 people
Spring onions 1/2 bunch
Salt as required
【Chilli oil】
Chilli flakes 2 tbsp
Garlic 1 clove
Sun dried shrimps 1-2 tbsp
Vegetable oil 5 tbsp
Salt & pepper as required

Method

Chop the spring onions. Season the squid with salt & pepper. Mix the chilli flakes with the oil and pour into the squid.

Make the chilli oil: finely chop the shrimps and blend until a powder.

Put the garlic and vegetable oil in a small pan with Step 2 and heat on medium.

When you can smell the garlic, add the chilli flakes and turn off the heat. Allow to cool.

Heat up a griddle pan on high. Lay all the squid onto the pan until cooked.

Remove the squid onto a plate. When it's hand hot, slice as required.

Add most of the chopped spring onions and salt into just cooked rice and mix well.

Put the rice from Step 7 onto a serving dish and pour over some chilli oil from Step 4. Arrange the squid from Step 6 and pour over some more chilli oil.

Sprinkle with the remaining spring onions before serving.

Tips & Note

●If you add Sichaun pepper instead of chilli oil, this will be better.
●I recommend using Japonica or Jasmine rice.
●You can use a frying pan if you don't have a griddle pan in Step 5.
