Prawn And Kohlrabi Salad

It's a great crunchy dish because of the kohlrabi.

Ingredients

King prawns 16
Kohlrabi 1/2
Carrot 1/2
Celery 1
Red onion 1/2
Cress as required
Mint or coriander 2-3 bunches
Dressing:
Fish sauce 3-4 tbsp
Water 2-3 tbsp
Vinegar or lemon juice 2 tbsp
Granulated sugar 1-2 tbsp
Garlic 1 clove
Chilli flakes 2 tsp

Method

Remove the top and bottom of the kohlrabi and peel off the thick skin. Cut this and the carrot into fine thin strips, and the celery into fine slices.

Slice the red onion very thinly and soak in water before draining well.

Remove the head and black thread down the spine of the prawns, leaving the tail intact.

Put some oil in a frying pan with crushed garlic (optional). Add the prawns and cook on a medium heat.

Put together all the dressing ingredients.

Put the sliced vegetables into a bowl with the prawns and mix well. Put onto a serving dish.

Sprinkle cress, mint and coriander (if you wish) over the top and pour over the dressing. It's ready to serve.

This is a kohlrabi.

Tips & Note

Kohlrabi tastes like very watery apples, but is great for a salad because of its crunchy texture.
