Prawn Mayonnaise & Roast Chicken Double Sandwich

Ingredients

Bread rolls 2
Leftover roast chicken as required
Lettuce leaf 1
Peri peri sauce as required
King prawns 10
Mayonnaise as required
Parsley as required

Method

Cut three sides of a square (twice) in the top of each roll and remove the bread to make two hollows, keeping a lid for each hollow.

Stuff each hollow with shredded lettuce leaf and add the leftover roast chicken into one hollow. Drizzle with 1 tsp peri peri sauce and garnish with the parsley.

In the other hollow, add 1 tsp mayonnaise and 5 boiled king prawns. Add a touch more mayonnaise and garnish with the parsley.

Close the lids and wrap in cling film, ready for your picnic.

Or an open egg mayonnaise and BLT version.

Don't waste the removed bread, you can use it in this Spanish dish called migas.

Tips & Note

Enjoy two different fillings in one bread roll - use your favourites. The fillings will never fall out of the bread, and they're easy to eat and take on a picnic.
