Teriyaki Chicken Sandwich Filling

Weird but wonderful combination of teriyaki sauce and cheddar cheese!

Ingredients

Baguette baton 1
Chicken thigh 130-150g
Salt & pepper as required
Spring onions (roughly chopped) 2
Cayenne pepper 1 tsp
Butter 1 tbsp
Onion (roughly chopped) 1/2
Mayonnaise 1 tbsp
Cheddar cheese (grated) 20-30g
●Soy sauce 3 tbsp
●Sake 3 tbsp
●Mirin 3 tbsp
●Sugar 1 tbsp

Method

Chop the chicken into small pieces, season with salt & pepper and rub on for 1 minute.

Put some oil in a frying pan and fry the chicken, onion, spring onions and cayenne pepper on high heat.

When the chicken is cooked, add the ●teriyaki sauce ingredients. Cook on medium heat for 3-4 minutes until the sauce is reduced.

Score the baguette baton in half and spread with the butter and mayonnaise. Place on foil.

Fill the baguette with the chicken mixture. Sprinkle with grated cheddar cheese and put in a preheated oven 180C.

It will be ready after 15 minutes.
