Pickled Egg Toast Toppers

Very good for home parties!

Ingredients

Pickled eggs 2
Onion 1/4
Avocado 1/2
Smoked salmon slices 2-3
Cream cheese 50g
Dill to your taste
Salt & pepper to your taste
Baguette or crackers to your taste

Method

Cut the pickled eggs into half and scoop out the yolk. Finely chop the white.

Finely chop the onion and rub with salt to stop it tasting acrid. Wash off the salt.

Smash the avocado with a fork. Coarsely chop the salmon and tear the dill.

Put Steps 1-3 into a bowl and add the cream cheese and salt & pepper, and mix well.

Put onto a serving dish next to the baguette or crackers, it's ready to serve.

Pickled eggs are very handy when making tartar sauce, for example, because you don't need to waste time boiling them.
