Patatas Bravas

Spanish fried potatoes served best with garlic mayonnaise and spicy salsa.

Ingredients

Potatoes 400g
Spicy salsa:
Onion (medium) 1
Garlic 3 cloves
Olive oil 2 tbsp
Dried chillis (small) 2
Paprika 1 tbsp
Tinned tomatoes (chopped, 227g) 1
Vinegar 1 tbsp

Method

Make the spicy salsa first: roughly chop the onion and garlic and fry in olive oil on medium heat.

When the onion is soft, add the paprika, chillis and tomatoes. Cook to reduce.

You can add a bit of water if it becomes too dry. Add vinegar and simmer further.

Turn the heat off and allow to cool. Blend slowly to make a thick sauce. It's ready.

Peel the potatoes and chop into bitesize pieces. Boil in salted water for 8 minutes.

Drain in a colander and pat dry with kitchen paper.

Put some oil in a frying pan and fry the cooked potatoes.

After they turn brown in 4-5 minutes, remove and drain on kitchen paper.

Transfer onto a serving dish and pour over the spicy salsa and garlic mayonnaise.
