Gherkin Bruschetta

I just changed this recipe to include refreshing and sharp gherkins.

Ingredients

Tomato (medium) 3
Gherkins (large) 2
Onion 1/4
Basil leaves 5-6
Baguette as required
【Dressing】
Gherkin vinegar 1 tbsp
Lemon juice 1 tbsp
Olive oil 2 tbsp
Salt & pepper as required
Crushed garlic 1 clove

Method

Remove the skin from the tomatoes by plunging into hot water. Deseed and chop to 1cm dice.

Finely chop the onion and rub with salt to remove any heat. Finely chop the gherkins.

Put all the dressing ingredients into a bowl and add Steps 1 & 2 (all pat dried). Tear in the basil leaves and mix to combine.

Slice the baguette and toast lightly. Top with Step 3 and enjoy!
