Quick Mini Pitta Bread Pizzas

You can easily make this on toast if you don't have pitta bread. It's quick because you're using store-cupboard ingredients, and the kids love the sweet sauce!

Ingredients

Pitta bread 4
Cheese (grated) as required
Cherry tomatoes (quarters) as required
Cucumber (thinly sliced) as required
Pepper (strips) as required
Onion (finely chopped) as required
Ketchup 4 tbsp
Tomato puree 2 tbsp

Method

Mix the ketchup and tomato puree. Lightly toast the pitta bread.

Spread the pitta bread with the sauce.

Cover with the cheese and other ingredients.

Grill for a few minutes until bubbling and golden.

Tips & Note

Also works with toasted bread. Use your favourite toppings, but try using the cucumber as it does a good job!
