Rice Salad with Mackerel, Avocado & Mint

I was taught this by a French friend, it's refreshing but quite filling!

Ingredients

Smoked mackerel fillet 1
Avocado 1
Mint leaves 6
Olive oil or rapeseed oil 3 tbsp
Lemon juice 1.5
Salt a little
Pepper a little
Coriander powder as you like
Long grain rice 220g

Method

Cook the rice as the packet instructions.

Dice the avocado and cut the mackerel into small pieces. Finely chop the mint.

Cool the rice and mix with the all the other ingredients except the mackerel. Transfer to a serving dish.

Scatter the mackerel on top before serving.

Tips & Note

My photo shows that I mixed in the mackerel, but I recommend to scatter it on the top, otherwise the whole dish gets a bit too fishy and you can't taste the mint.
You can use large cous cous or pearl barley instead of rice, if you prefer.
