Avocado & Smoked Salmon Round Salad

Very simple and easy but looks so professional and beautiful because of the round mould you make it in.

Ingredients

Avocado 2
Tofu 1/2
Spring onion 1
Smoked salmon slices 2
Lemon juice 1 tsp
Mayonnaise 2-3 tbsp
Wasabi 1 tsp
[Sauce]
Dashi broth 1 cup
Mirin 2 tbsp
Light soy sauce 2 tbsp
Potato starch in a bit of water as required

Method

Chop the avocado into small dice, mix with the lemon juice and wasabi.

Drain the tofu well weighing it down with a plate. Tear into pieces and mix with the finely chopped spring onions.

Finely chop the smoked salmon.

Place the circle mould into the middle of you serving dish. Fill up with Step 1, Step 2 and Step 3 in order. Cleanly lift off the circle mould.

Put the dashi broth, soy sauce and mirin in a pan and boil. Turn off the heat and add the potato starch, you'll get a nice sticky sauce.

When Step 5 cools down to hand hot, pour over Step 4.

Tips & Note

●When you fill up the circle mould, press down firmly otherwise it will collapse when you remove it.
●If you oil the inside of the mould before use, it will be easier to remove.
