Simmered Sausages Wrapped In Tofu

Ingredients

Deep fried tofu (aburaage) 4
Sausages 4
Green beans 10
Carrot 1/2
Rice cakes (mochi) 2
Quail eggs 8
Soup:
Dashi stock 300ml
Sake 2 tbsp
Soy sauce 1 tbsp
Mirin 2 tbsp

Method

Pour boiling hot water onto the deep fried tofu to remove excess oil. Cut into half. Cut the rice cakes into 6 pieces each.

Boil the quail eggs and remove the shells. Finely chop the green beans and carrots.

Remove the sausagemeat from the skins and put in a bowl with the green beans and carrots and knead well.

Open the tofu packets and stuff with a scoop of the mixture from Step 3, a quail egg and rice cake. Seal with a cocktail stick.

Put the soup ingredients into a pan and bring to the boil. Add the sausage packets from Step 4 and the leftover rice cakes and simmer on medium heat with the lid on for 15 minutes.

Transfer to a serving bowl and sprinkle with the finely chopped spring onions.
