Simple Thai Vermicelli Salad

I found this lovely Thai restaurant in Soho and I'm mad about trying out all sorts of Thai dishes!

Ingredients

Vermicelli 80g
Frozen prawns 15
Yellow pepper 1/4
Green pepper 1/4
Carrot 1/2
Coriander as you like
Sauce:
Fish sauce (nam pla) 5 tbsp
Sugar 2 tbsp
Honey 1 tbsp
Light soy sauce 1 tsp
Lemon 1
Sesame oil 1 tsp
Dried chilli slices 10
Ginger 1 thumb

Method

Thaw the frozen prawns at room temperature until thoroughly defrosted. Rehydrate the vermicelli in hot water for 4-5 minutes. Rinse under running cold water and drain.

Put all the sauce ingredients in a bowl and mix well. Squeeze in the whole lemon.

Cut the peppers and carrot into fine strips and add to the bowl at Step 2 together with the coriander and mix.

Add the prawns and vermicelli from Step 1 and mix well. Keep aside for 20-30 minutes before transferring to a serving dish.
