Pad Thai Fried Noodles Style (Yaki Soba)

Ingredients

Flat rice noodles 150g
Egg 1
Prawns or chicken 200g
Dried shrimps 2-4 tbsp
Ginger 1 thumb
Garlic (optional) 1 clove
Dried chilli 1
Spring onions 2
Oyster sauce 1.5 tbsp
Fish sauce (nam pla) 1.5 tbsp
Lime 1/2
Beansprouts a handful
Peanuts 2 tbsp

Method

Make a scrambled egg in a frying pan and remove to a plate.

Soak the rice noodles in hot water for 1-2 minutes. When white and soft, drain in a colander.

Put the prawns or chicken, dried shrimps, finely chopped ginger and garlic, dried chilli and roughly chopped spring onions in a frying pan and fry on medium heat.

When cooked, add the oyster sauce, fish sauce, noodles and scrambled egg and fry.

Transfer to a serving dish and scatter with the raw beansprouts and crushed peanuts. Squeeze the lime over the top before serving.

Tips & Note

Rice noodles will be overcooked if you boil them - soaking in hot water is enough. If you add a touch of sugar, the chilli heat will intensify slightly. If you don't like raw beansprouts, you can fry them quickly with the other vegetables first.
