アスパラガス 6本
ゆでたまご
オリーブオイル 小さじ1
1/2つまみ
ガーキンピクルス(割愛可)
マヨネーズ 大さじ1.5
マスタード(イングリッシュor ディジョン) 小さじ1/2
白ワインビネガー 小さじ2
黒コショウ お好みで
パルミジャーノレッジャーノ お好みで

Method

アスパラガスはそのまま食べられる長さにカット済みで売っていたのでそのまま使います。ゆでたまごを1個、作っておきます。

フライパンを中火で熱したらオリーブオイル小さじ1をひいてアスパラを4分ほどゆっくりソテーします。この時、塩1/2つまみをパラリ。

その間にタマゴサラダソースを作ります。ボウルにマヨネーズ大さじ1.5。

ガーキンピクルス1本をみじん切りにして入れ、マスタードを加えてよく練ります。

このままだとモッタリしているのでビネガー小さじ2を加えてパンチをきかせた上に少しサラッとさせます。

お皿にアスパラガスを並べたら5のタマゴサラダソースをたっぷり乗せます。

仕上げにパルミジャーノレッジャーノチーズと黒コショウをたっぷりふって出来上がり。
