Potato and Celery Mustard Salad

A light and tasty refreshing salad.

Ingredients

Potatoes (medium) 3-4
Celery 2
Salt (for boiling) 1 tsp
Salt & pepper a little
Wholegrain mustard 1 tsp
White wine vinegar 1 tsp
Olive oil 1 tbsp

Method

Peel the potatoes and cut into strips. Cut the celery into pieces about 5 centimeters long and then into batons.

Put potatoes in boiling salted water for 2 minutes then soak in cold water, drain and pat dry.

Combine the salt & pepper, mustard, vinegar and olive oil to make a nice dressing to coat the potatoes and celery.
