Serves 4 Prep: 20 min Cook: 55 min

Ingredients

Grated celery 80g
Celery for garnish, 2cm pieces 30g
Egg 1
Vegetable oil 80ml
Milk 80ml
Salt 5g
Sugar 15g
Single cream 120ml
Pancetta (bacon) 20g
Flour 170g
Baking powder 1 tsp
Caraway seeds as required

Method

1
Put the egg, oil, sugar, salt, milk and cream in a bowl and mix well.
2
Add the grated celery and finely chopped pancetta.
3
Sift the flour and baking powder into the bowl and mix lightly with a spatula.
4
Line a baking tin (for pound cake) with baking paper and pour in the mixture.
5
Place the celery garnish on top and sprinkle with caraway seeds. Put in a hot oven 180C for 55 minutes. It's ready!
6
These are the caraway seeds - they look like seeds but it's actually a fruit. Use as a spice.

Tips & Note

●Pancetta is salted pork belly, but bacon is still perfectly OK to use.
If you add more bacon, it could overpower, as the salt will also increase so use it wisely.
If you like a lighter texture to this savoury cake, use a whisk at Step 3 instead of a spatula.
