Smoked Mackerel Sandwich

Mascarpone and smoked mackerel makes a lovely combination!

Ingredients

Smoked mackerel 290g
Mascarpone cheese 100g
Herbs (dill, chives and parsley) as you like
Sandwich bread slices (white & brown) 8 each

Method

Remove the skin from the mackerel and blend.

Add the mascarpone to Step 1 and blend (add your favourite herbs here too).

Cut out rounds of white and brown bread.

Spread lots of the pate from Step 2 onto each slice then sandwich together attractively.

Tips & Note

If you don't have a blender, you can crush in a pestle and mortar or mash continuously with a fork (but this won't be very smooth).
