Celeriac & Courgette Salad with Blue Cheese Dressing

This is a great hit - make lots of it when you have a party!

Ingredients

Celeriac 1/2
Courgette 1/2
Rocket 1 pack
Blue cheese as required
White wine vinegar as required
Olive oil as required
Salt as required
Pepper as required

Method

Thickly peel the celeriac.

Grate it coarsely into a bowl.

It looks like this.

Thinly slice the courgette and mix with the rocket and add to the grated celeriac.

Make the dressing: the ratio is 1 part vinegar and 2 parts oil. Crumble in the blue cheese.

Pour the dressing into Step 4 and mix to combine. Transfer to a serving dish and sprinkle with salt & pepper.

Tips & Note

☆When you make the dressing at Step 5, mix the vinegar and oil together well first. Use a jar with a lid and shake until it becomes golden.
