Ingredients

Portobello mushrooms 2
Onion 1/2-1
Tomatoes 2
Garlic 3-4 cloves
Parsley as required
Olive oil as required
White wine vinegar as required
Salt as required
Pepper as required

Method

Choose thick mushrooms.

Finely slice the mushrooms, onion and tomatoes. Finely chop the garlic and parsley.

Arrange the mushrooms on a flat serving dish. Top with the sliced tomatoes.

Lay the onion, parsley and garlic on top and pour over the olive oil and white wine vinegar (mix them together separately first). Season with salt & pepper and serve.

Tips & Note

★I recommend a ratio of 2:1 olive oil to vinegar. I make this up and shake in a small jar until it becomes golden.
