Ingredients

Onions (medium) 2
Sushi vinegar 3 tbsp
Extra virgin olive oil 3 tbsp
Pepper as required

Method

Peel the onions, cut in half and slice to half moons. Put into a container with an airtight lid.

Mix the sushi vinegar and olive oil together and pour over the onions.

Season with freshly ground pepper and mix lightly. Secure the lid and keep in the fridge for at least 2-3 hours or overnight.

Tips & Note

The onions will release moisture, so pour over enough sushi vinegar and olive oil to cover 70%. If you don't have sushi vinegar, use apple cider vinegar with a touch of salt and sugar.
