Sweet & Delicious Honey Lemon Chicken

Ingredients

Chicken breast fillet (large) 1
Salt & pepper as required
Paprika 1 tsp
Vegetable oil 2 tbsp
Your favourite vegetables, such as:
Mangetout 12
Mushrooms 2-3
Green pepper 1/2
Carrot (small) 1
Garlic 2 cloves
Honey 6-7 tbsp
Lemon juice 1
Soy sauce 1 tbsp
Sesame seeds 2 tbsp
Spring onion 1
Flour as required
Chicken stock 180ml
Crushed chilli 1 tsp

Method

Cut the chicken into 8 pieces and season with salt & pepper and paprika. Rub well and keep aside in a bowl for 5 minutes.

Dredge with the flour. Put the oil in a large frying pan and fry the chicken on high heat.

After 4-5 minutes, add the chopped harder vegetables first (carrots, green peppers, etc) then the finely chopped garlic.

When all the vegetables are cooked, add the honey, chicken stock, lemon juice, soy sauce and crushed chilli. Simmer on high heat to reduce the sauce by half.

Transfer to a serving dish and sprinkle with lots of sesame seeds and finely chopped spring onions.

Tips & Note

For kids, you can omit the chilli. If you don't have honey, you can use golden syrup.
