Salmon and Kale Rice

Kale is a superfood, so it's very healthy - try it with rice.

Ingredients

Rice 2 gou (300g)
Kale 100g
Carrot (small) 1
Salmon fillet (salted) 1
Kombu seaweed sheet (8cm×8cm) 1
Sake 2 tbsp
Soy sauce 1 tbsp
Salt 2/3 tsp

Method

Put the washed rice and water into a rice cooker. Add the kombu seaweed and leave for 30-60 minutes.

Kale can be very hard, so soften in a microwave for 3 minutes then finely chop.

Finely chop the carrot and microwave for 2 minutes.

Remove the kombu seaweed from the rice cooker. Add all the seasoning ingredients, kale and carrots. Place the uncooked salmon on top.

Turn on the rice cooker. When it's cooked, stir the salmon into flakes into the rice. Put the lid back on and leave for 20 minutes before serving.

Tips & Note

Season the salmon generously with salt. If you can, scorch the salmon before putting in the rice for extra flavour.
