Smoked Salmon & Pickled Mooli Rice Sandwich (Onigirazu)

I mixed the mayonnaise with spicy Korean Gochujang to give it a bit of a kick.

Ingredients

Smoked salmon 40-50g
Egg 1
Sugar a pinch
Basil leaves 3-4
Pickled mooli slices (takuan) 3mm x 2
Mayonnaise 1 tbsp
Gochujang 1 tsp
Salt (for the cooked rice) a pinch
Cooked rice (firm) 100g
Sesame seeds as required
Nori sheet 1

Method

Make 2 small omelettes from 1 beaten egg mixed with a pinch of sugar.

Here are the ingredients. Slice the salmon and mooli into fine strips.

Place the cling film on a chopping board to look like this◆ and place the nori sheet on top in the same direction.

Add the salt to the cooked rice and place half of it in the centre of the nori and flatten out.

Place the basil leaves, one omelette, salmon and pickled mooli then top with the other omelette.

Pour over the sauce of mayonnaise and Gochujang before covering with the remaining rice.

Lift the top and bottom corners of the nori and cling film to the centre to stick together.

Repeat with the left and right corners to form a package. Cling film it all together firmly.

When the nori has softened, cut into half diagonally before removing the cling film.

Tips & Note

●Cutting diagonally will give you two triangles of rice sandwich.
●Don't overfill with ingredients, otherwise the nori sheet will not be big enough to cover.
