Smoked Salmon and Capers Rice Balls (Onigiri)

Simply flake shop bought smoked salmon and add sour capers to give a lively refreshing flavour.

Ingredients

Cooked rice for 1
Smoked salmon 100-120g
Capers 2 tbsp
Mayonnaise 1 tbsp
Soy sauce 1.5 tsp
Sesame oil 1 tsp
Spring onion 1
Nori sheet 1
Sesame seeds as you like

Method

I used a 120g pack of smoked salmon. Finely chop the salmon and the capers.

Put the salmon and capers with the just cooked hot rice, chopped spring onion, mayonnaise, soy sauce and sesame oil into a bowl.

Mix everything well and evenly.

You can make rice balls in any shape you like: square, round, triangle...I made them round this time.

I covered each one in the nori seaweed cut into 4 pieces. Do this just before you enjoy them so that the nori is still crisp.

Tips & Note

Actually, I also added some Parmesan cheese (top left in the picture for Step 1) but, as the smoked salmon is pretty strong, this is not necessary.
