Pretty and Pink Marble Egg

Once you've tried the blue egg, you'll want to make this pink one too!

Pickled beetroot (in a jar) 1 (340g)
Eggs 2

Method

Hard or half-boil the eggs.

Remove the beetroot from the jar into a bowl and keep aside. Place one peeled egg gently in the jar. Smash the shell of the other egg all over and add to the jar with the cracked shell still on.

Put the jar lid on and keep soaked for 2 hours. Shake gently occasionally.

Remove the eggs from the beetroot jar and peel the smashed egg. You can wash under running water briefly, the colour won't wash away.

Even soaking for 2 hours in vinegar, the eggs don't taste sour. Enjoy as it is or add to a salad.

I tried this experimentation first with red cabbage to get this vivid blue egg.
