Freeze Dried Tofu Wrapped in Parma Ham

Use freeze-dried tofu instead of chicken to make this saltimbocca.

Ingredients

Freeze dried tofu (koya tofu) 4
Cheese (Red Leicester) slices 4
Parma ham slices 4
Olive oil 1 tbsp
Tomato sauce (shop bought) 4 tbsp

Method

Rehydrate the tofu for 4-5 minutes, it will double in size. Squeeze out all the moisture.

Score each tofu piece almost through and insert a slice of cheese. Wrap with the parma ham.

Put the olive oil in a pan on medium heat and add Step 2. Fry on both sides for 5 minutes total until nicely browned and crisp.

When the cheese melts, top with the tomato sauce before serving.

Tips & Note

Use your favourite cheese and tomato sauce. I used Red Leicester and a chilli hot tomato sauce.
