Ingredients

Avocado 1/2
Prawns 12-16
Chicory leaves 4
Mayonnaise 1 tsp
Tomato ketchup 1 tsp
Paprika a little

Method

Chop the avocado to 5mm dice and blanch the prawns in hot water. Mix both with the mayonnaise and ketchup.

Prepare 4 large leaves from the chicory.

Use the chicory leaves as a scoop for Step 1, sprinkled with paprika.

Tips & Note

●Use ready cooked prawns but I blanched them as well
