Prawn And Samphire Cocktail Salad

Ingredients

Prawns (small) 100g
Mango 1cm diced 100g
Samphire 100g
Dressing:
Lemon 1 tsp
Olive oil 1 tsp
Wine vinegar 0.5 tsp
Wholegrain mustard 0.5 tsp
Pepper a pinch
Parsley as required

Method

Boil the prawns. Pour hot water on the samphire. Drain both well and cut to bitesize pieces.

Mix all the dressing ingredients together and add the diced mango and the prawns and samphire. It's ready!

This is samphire.

Tips & Note

Samphire tastes slightly salty and has a crunchy seaweed texture. You can normally buy it near the fishmonger in a large supermarket because it is usually served with seafood.
