Asparagus and Prawn Spring Rolls

Ideal for a home party!

Ingredients

Asparagus 3
Spring roll wrappers 3
Peeled prawns 40g
Sake 1/2 tsp
Salt a little
Oil 1 tbsp
Flour in a bit of water as required
Sweet chilli sauce as required
Lemon juice as required

Method

Mince the prawns with the blunt edge of a knife. Add the sake and salt.

Snap the asparagus and discard the root end.

Place the asparagus and minced prawn onto a wrapper.

Seal with the flour in water and put in an heated oiled frying pan (medium heat) until golden on both sides.

Add the lemon juice to the sweet chilli sauce, use this for dipping the spring rolls. Enjoy!

This is the spring roll wrappers I used, available in the frozen aisle of supermarkets in Chinatown.

Tips & Note

●Make sure the asparagus length will fit into your frying pan.
●Sprinkle over with coriander to give it a more authentic Asian feel, if you like.
