Grilled Leeks with a Chicken & Vegetable Sauce

You won't believe how sweet the leeks taste in this dish.

Ingredients

Leek 1
Minced chicken 100g
Carrot 1/3
Green beans 5-6
Shimeji mushrooms 1/4 pack
Dashi stock 1 cup
Potato starch in a bit of water as required
Seasonings:
Soy sauce 1 tbsp
Sake 1 tbsp
Mirin 1 tbsp
Ginger (grated) 1/2 tsp

Method

Cut the leek into 5cm pieces and chop the carrot into small dice. Lightly cook the green beans and chop to the same size as the carrots.

Put 1 tsp oil in a frying pan and fry the leeks until nicely browned.

Put all the seasoning ingredients and minced chicken in another pan and fry on low heat until browned. Add the dashi stock and simmer, removing any scum.

Add the carrots, mushrooms and leeks from Step 2 and simmer until the carrots soften. Season with salt.

Remove the leeks from the pan and transfer to a serving bowl.

Add the green beans to the pan with the potato starch to thicken.

Pour over the leeks and serve.
