Chicken Wings & New Potatoes Simmered in Black Vinegar

Ingredients

Chicken wings 12
New potatoes 300g
Light soy sauce 3 tbsp
Black vinegar 2 tbsp
Sugar 3 tbsp
Sake 2 tbsp
Rice vinegar 2 tbsp
Sea salt as required
Pepper as required

Method

Wash the potatoes and boil with the skin until nicely cooked.

Trim the chicken wings and score in places. Season with salt & pepper and rub in.

Put the oil in a deep pan and fry the chicken wings skin side down until cooked. Add the cooked potatoes and sugar and fry until the sugar dissolves and caramelises.

Add the sake, soy sauce and vinegar and rice vinegar. Put a smaller lid on to cover the ingredients and cook for 5 minutes on medium high heat.

Remove the lid and turn over the chicken and potatoes. Cook until all the sauce has reduced, then serve.

Tips & Note

●Dab away any fat from the chicken wings at Step 3 with kitchen paper
●This dish originally uses black vinegar, but you can use ordinary vinegar if you don't have any
