Sweetcorn Creme Brulee

Ingredients

Fresh sweetcorn 1 ear (100g)
Milk 150ml
Egg 1
Egg yolk 1
Parmigiano reggiano 3 tbsp
Sea salt if required

Method

Boil the fresh sweetcorn (removed from the ear), keeping a small bit aside for the garnish. Blend with a mixer together with the milk and push gently through a sieve.

Add the egg and egg yolk through a sieve and stir it gently without incorporating any air.

Add 2 tbsp of the parmigiano reggiano and pour into a ramekin dish.

Put the ramekin dish into a larger dish filled with hot water. Put into a pre-heated oven 180C for about 20 minutes until it sets.

Decorate the top with the remaining sweetcorn and parmigiano reggiano and grill for 3 minutes or until nicely browned.

Tips & Note

●Perform Step 1 gently, otherwise you'll get some of the sweetcorn kernel skin pushing through.
●Delicious even when cold.
