Pan Fried Pork in Mushroom Sauce

Enjoy a tender pork fillet with a delicious deep flavoured mushroom sauce.

Ingredients

Pork fillets 400g
Salt & pepper as required
Flour as required
Vegetable oil 1 tbsp
Butter 2 tsp
Mushroom sauce:
Vegetable oil 1 tbsp
Butter 2 tsp
Onion 1/2
Mushrooms 200g
Chicken stock 200ml
Dijon or wholegrain mustard 1 tbsp
Double cream 150ml
Salt & pepper as required

Method

Tenderise the pork fillets and season with salt & pepper on both sides. Keep aside for 5 minutes. Dredge with the flour and pat off any excess.

Put the vegetable oil and butter in a frying pan on high heat. Fry the pork for 3 minutes one each side until nicely browned then remove to a plate.

Remove excess oil with kitchen paper and add more vegetable oil and butter. Add the sliced mushrooms and chopped onions.

Fry for 7-8 minutes until reduced to half.

Add the stock and reduce to half on high heat. Add the mustard and double cream and mix well.

Return the pork fillets from Step 2 to the pan and cook for 4-5 minutes on medium heat, basting occasionally. Transfer to a serving dish.
