Mackerel Simmered in Sweet Chilli Sauce

Ingredients

Mackerel fillets 4
Edamame beans 1/2 cup
Spring onions 2
Garlic (finely chopped) 2 cloves
Ginger (finely chopped) 1 tsp
Chinese chilli bean sauce 1 tbsp
Tomato ketchup 1 tbsp
Sugar 1 tsp
Chicken soup 150ml
Sake (or white wine) 1 tbsp
Potato starch or cornflour as required
Potato starch in a bit of water as required
Salt & pepper as required

Method

Boil the edamame beans and shell them.

Cut the mackerel into bitesize pieces and season with salt & pepper.

Dredge with the potato starch and shallow fry in lots of oil. remove and drain well.

Put 1 tbsp vegetable oil in a frying pan and fry the garlic, ginger and chilli bean sauce. Add the fried mackerel.

Add the chicken soup, ketchup and sake and bring to the boil before turning down to a low simmer.

Add the finely chopped spring onions and the potato starch in water to thicken. Add the edamame beans and serve.
