Vietnamese Style Turkey with Rice

So healthy with lots of vegetables.

Ingredients

Turkey mince 120g
Thai rice for 2 people
Lemongrass 1
Shallot or red onion (chopped) 2 tbsp
Fish sauce (nam pla) 2-3 tbsp
Chilli powder 1 tsp
Palm sugar 1 tbsp
Lime juice 3 tbsp
Crushed peanuts 2 tbsp
Spring onions 2
Coriander as required
Lettuce as required
Cress or mint as required

Method

Finely chop the shallot and lemongrass. Roughly chop the spring onions, coriander and lettuce.

Dry roast the peanuts and coarsley chop.

Put some oil in a frying pan and fry the turkey mince until browned and separate.

Add the shallots and lemongrass and fry further.

Add the fish sauce, chilli powder, palm sugar, lime juice and cooked rice. Mix well then turn the heat off.

Transfer to a serving dish and garnish around the dish with the spring onions, coriander and lettuce before serving.
