Courgette Pasta

A creamy sauce and fresh tomatoes really make this dish.

Ingredients

Courgettes (medium) 2
Onion 1/2
Garlic 1/2 clove
Bacon or pancetta 30g
Tomato 1
Olive oil as required
Capers 1 tsp
Single cream 3 tbsp
Fresh pasta for 2 people
Parmigiano reggiano as required
Black pepper as required
Sea salt a little

Method

Slice the courgettes into thin strips and finely chop the onion and garlic. Deseed the tomato and dice into 5mm square.

Fry the onions in olive oil in a frying pan on low heat.

When soft, add the garlic, pancetta, courgettes and capers. Season with salt & pepper.

Cook the pasta a bit al dente.

Add single cream, the cooked pasta and tomatoes to Step 3 and stir well. Serve on a dish and sprinkle with the Parmigiano reggiano.
